Can someone recommend a few hiking trails that lead to nice beaches on St John?

Try this link from the National Park Service:

If you click on the hiking link on the right it'll take you to another link on the site and a trail map. You can get more information from the National Park Service center on St John along with hard copy maps. Have fun!

For hike/snorkle combo, I reccomend SAlt Pond / Ram head. Link with map above. Great snorkling at Salt pond. Spectacular hike to Ram Head.

Or hike the ruin trail accross from cinomin bay entrance. Nice easy stroll. Interesting ruins. Cinomin bay is nice beach Good snorkling at jumbie between cinomin and cruz bay.
