Recipe for a Limin de Coconut?

Hello all!

Does anyone have a good recipe for a "Limin de Coconut? I think it is basically a lime daquiri with the addition of Coco Lopez. That sounds perfect for a nice spring day here in Pittsburgh. Also, can anyone recommend a bar or restaurant that makes good one on STT, STJ or the BVI? Can't wait . . . 35 days to go!!

Cruzan coconut rum, triple sec and Rose's lime juice is toadally delicious. Cheers!

Ok, went to the liquor store here in Pittsburgh, and this is the recipe they gave me for a "Lime in de Coconut." I am glad to share, because these babies are delicious.

1 oz. Light Rum
1 oz Cruzan Coconut Rum
1 oz Roses Lime Juice
1 oz Coco Lopez
1 cup Crushed Ice

Pour all ingredients into a blender on ice-crusher mode and Voila!!

Made pitchers of these for a neighborhood of sweaty men doing yard maintenance, and the reviews were, "Very refreshing," and "Where the hell do I get this recipe?" among others.

Would still love to here from others about alternative recipes and places to find this coconutty-limey goodness in the USVI and BVI.

Alternative recipe for Limin de Coconut,

One coconut, split in half
One lime per half squeezed inside
Add crushed ice.
Oh yeah, one of those little umbrellas and a straw.

(Be sure you have your friends take a photo of you climbin' the coconut palm)

I don't know if it is called by same name but the Beach Bar on STJ makes an excellent lime/coconut drink. I believe it includes coco lopez coconut syrup, rum and half of a whole lime (yes the rind and all). Blended finely. There might be more to it but I think that is pretty close. I usually don't go for coconut drinks, but this one is delicious.

P.S. If anyone knows the exact recipe I would love to have it

Here is the recipee off of the beach bars web site.

Lime & Coconut

If you like Piña Coladas,
but Not Getting Caught in The Rain...
Then You'll like this More Unique
Virgin Island Frozen Selection

For 1 Drink:

1.5 oz Coconut Rum
(light or dark rum can be substituted)
2 oz Rose's Lime Juice
1 oz Coco Lopez
1/2 slice of lime
Splash of Sprite (optional)
Slice of Lime Garnish)
Put all ingredients in a blender. Add 1 glass of ice. Blend till smooth. You can add a dash of Sprite or simple syrup to sweeten and/or to make blending easier if it is too thick. We get the most compliments on the Lime and Coconuts that we make with Sprite, and the lime in the blender is very important

My husband and I fell in love with this drink while we were in St. Croix a couple years ago. We first had it at Duggan's Reef on St. Croix, and the bartenders at the Buccanneer knew how to make it as well. They all used a whole lime (rind and all), Cruzan Rum and Coco Lopez.
