Hi

In the past on trips to St Thomas I have ate at Cuzzin's Restaurant. Two items I loved three are as follows: 01) One I think is called Mash and could be a mashed sweet potato with raisins, it's very good. 02) The other is a kind of burnt Banana with like a brown sugar taste.

Would anyone here have a recipe or web link on these two food items? I'd love the recipes on these, assuming they are public ones.

Thanks for any help!

For the potato mix, mash up boiled white potatoes (you can use sweet potatoes/yams too) with butter, ketchup, add raisins and cinnamon/nutmeg/allspice either in combination or separately, throw into a buttered casserole and bake for 30 minutes at 350. I like to add minced onion and garlic too. For the other, peel and slice up a firm plantain and fry up with brown sugar and butter in a heavy pan. Enjoy!
