I have been reading mail on several different USVI forums and am always amazed at the naivety in restaurant customers who give every ounce of credit to the executive chef of fine restaurants. There are many other talented people in those kitchens - especially the sous chef, who undoubtedly is THE ONE who is cooking and doing the beautiful plating while the executive chef takes all of the accolades with no mention of his staff. No, I am not a chef - nor am I in the industry - but am aware & recognize the problem through friends who are working as such....no names or places need mentioning.

Bert,
I hope you weren't refering to me. I also want to point out that most chef based restaurants on STJ, including my restaurant, have a chef who is passionate enough to work long hours and work saute or grill stations as well as their other duties to make sure the food is their food. Personally, no one will put as much care into the food as the person whose name is on the menu. I not in it for the money or fame!

No, Chris, I wasn't referring to YOU at all. I adore your restaurant and know that you have a compassion for food just from reading your mail on this board. You do know as well as I do that this is a common occurence, however. It is quite frustrating to watch a very dear & hard-working person close to you - after thousands of dollars & hundreds of hours in one of the best culinary schools - to stand in a kitchen and meticulously create gourmet fare for a beautiful resort just to watch "THE CHEF" (the one on the menu) carry it personally to a table and indeed accept the thanks for himself.
Enough. This is a travel forum and I enjoy it. Thanks for letting me vent, however.
P.S. Have the rains subsided???

Hi Chris
I was wondering if you would be able to take time to talk to a young man (14) my son about the industry (Food) .
I will be on StJohn next week and be working at Maho for a month and my son's will be down for the 4th of july week.
My son Jordan would like to be a chef. And I would like for him to meet a real one and one who is on StJohn. My Fav place.
we have talked before last year.
So where are you working now?
