My daughter has a project on the USVI's and she also has to bring in a local dish for the class to eat. Any locals got any suggestions for something simple?

We're coming down in August - we can't wait. I'm very glad my daughter is excited too about the trip - that's why she pick the USVI as her project 🙂

I don't know, saltfish is kind of difficult for someone who hasn't made it before. I don't even know if salted fish is available in some stateside supermarkets. I would just try johnny cakes, or curry chicken or something. Also, do a google search for VI dishes.

I would make ginger beer. It has a fun name. Is non-alcoholic. It only has three ingredients and you can make it in 20 minutes.
